I love soup! (Have I said that before?) Any kind of soup, really. However, Mr. Gracious has this food philosophy that it’s not really a meal unless it’s got meat. Enter BACON. It’s a well known fact of life that everything is better with bacon, this Southern Corn Chowder included. This Southern corn chowder is dressed up with flavorful bacon and garlic. It’s the perfect cozy dish to warm you up on a cold evening. You really can’t go wrong with a classic, like Southern Corn Chowder!

This Southern Corn Chowder recipe calls for canned corn because I love making it in the cold winter months, but if you have fresh corn, or even frozen corn, just measure out about 3-5 cups to substitute.

Serve this Southern Corn Chowder with a warm, buttery, crusty bread for a full hearty meal.

You wouldn’t believe how delicious this soup is! It is so hearty and comforting, and it will warm those cold days in no time.

I created this soup to not be too much of a splurge, adding 1/4 cup butter and 1/3 cup cream (divide that out among 5 servings) yet you still it’s incredibly creamy and not overly rich. It kind of makes the traditional chicken noodle seem boring. Yes, the traditional chicken noodle soup will still have it’s place, but the majority of the time this is the one I’m going to want to make. My family loved it, kids included! Success :).

Whenever really cold days roll around, I’m all about soups and lots of it! This white bean & bacon soup is perfect for those days. I love how hearty it is and the texture was just the right amount of creamy. There were some whole beans and then carrots throughout every bite. And we cannot forget the amazing bacon that finished off this soup so nicely. The salty bite and flavor rounded it out extremely well. The best part of this soup came the next day. The longer this soup sat, the more the flavors developed and the creamier it got. I was so thrilled with how this soup turned out. It should be on your menu this week. It’s a cinch to put together. Just soak the beans overnight and the soup will cook up in no time!
